PEF technology enhances fruit preservation and snack production efficiency

Elea's PEF systems use precision electrical pulses to open cell membranes (electroporation).

Elea's largest system, the PEF Advantage 1000, can process up to 100 t/h. The PEF Advantage B Micro, an all-in-one system with a capacity of up to 1.7 t/h, is suitable for small producers.

The system is ideal for processing fruit that is subsequently freeze-dried.

PEF technology reduces drying times, ensures control of processing, and preserves the shape, color, and flavor of fruit.

PEF technology can also be used for producing potato and vegetable snacks.

Blanching times are reduced by up to 50%, speeding up the production process and increasing efficiency.

At the same time, clean cuts result in less breakage, which improves the quality of fries, potato crisps, and vegetable snacks.
